Vinification
Destemming - Cryomaceration at 6°-8°C for 8 hours. Soft pressing - Fermentation with selected yeasts - Fermentation temperature of 15°C

Stainless steel tanks and sparkling wine production in autoclave for refermentation for a minimum period of about 30 days

Characteristics
A brilliant straw yellow color with greenish hues, characterized by abundant fine perlage. Delightful aroma of peach and ripe pear, exotic fruit combined with light citrus notes. The taste is lively, enveloping, and balanced with countless floral scents for a unique and recognizable aromatic profile
